  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth, low sodium (120 ml)
  • 1/3 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning (blend of dried basil, oregano, and thyme)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped
  • Salt and freshly ground black pepper to taste

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering but not smoking.
  3. Add chicken breasts to the pan without crowding. Cook 4-5 minutes per side until golden brown and nearly cooked through (internal temperature about 160°F). Remove chicken and set aside.
  4. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the pan. Stir for about 1 minute until fragrant.
  5. Pour in chicken broth, scraping up browned bits from the pan.
  6. Stir in heavy cream and Parmesan cheese. Simmer gently for 3-4 minutes until sauce thickens slightly. Add more broth if sauce is too thick.
  7. Return chicken breasts to the pan, nestling them into the sauce. Cover with a lid and simmer for 5 minutes to finish cooking and meld flavors.
  8. Sprinkle red pepper flakes (if using) and chopped fresh basil over the top. Adjust seasoning with salt and pepper as needed.
  9. Serve immediately, spooning sauce over the chicken.
