Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp granulated sugar
  • 1 tsp garlic powder
  • 1 tsp salt (kosher or sea salt recommended)
  • 1/2 cup (113g) cold unsalted butter, cubed
  • 1 1/2 cups (170g) freshly shredded sharp cheddar cheese
  • 1 cup (240ml) room temperature buttermilk
  • 1/4 cup (57g) unsalted butter, melted (for glaze)
  • 1/2 tsp garlic powder (for glaze)
  • Pinch of salt (for glaze)
  • 1 tbsp finely chopped fresh parsley (for glaze)
  • Optional: pinch of cayenne pepper or smoked paprika (for glaze or dough)

Instructions

  1. Preheat your oven to 425°F (220°C) and line your baking sheet or cast iron skillet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, sugar, garlic powder, and salt.
  3. Add the cold, cubed butter to the dry ingredients and work it in with a pastry cutter or fingers until the mixture resembles coarse crumbs with pea-sized bits of butter.
  4. Fold in the shredded sharp cheddar cheese evenly.
  5. Pour the room temperature buttermilk into the dry mixture and gently stir with a spatula just until the dough comes together; do not overmix.
  6. Using a 1/4-cup measuring cup, scoop the dough onto the prepared baking sheet or skillet, spacing about 2 inches apart.
  7. Bake for 12-15 minutes until golden brown and a toothpick inserted in the center comes out clean.
  8. While baking, melt the 1/4 cup unsalted butter and stir in garlic powder, a pinch of salt, chopped parsley, and optional cayenne pepper.
  9. Brush the garlic butter glaze generously over the hot biscuits as soon as they come out of the oven.
  10. Let the biscuits cool slightly and serve warm.

Notes

Keep butter cold to ensure flaky layers. Do not overmix the dough to avoid tough biscuits. Freshly shred cheddar cheese for best melting and flavor. Brush garlic butter glaze immediately after baking for signature finish. Dough can be refrigerated overnight and baked next day. For gluten-free, substitute flour with 1:1 gluten-free baking blend. For dairy-free, use vegan butter and plant-based milk with lemon juice as buttermilk substitute.
