This Easy Buffalo Chicken Dip is a creamy, spicy, and tangy crowd-pleaser made with just four ingredients in a slow cooker. Perfect for game days, potlucks, and parties, it’s a nostalgic comfort food that comes together in minutes.

  • 2 cups (340g) cooked, shredded chicken (about 2 cups)
  • 8 oz (226g) block cream cheese, softened
  • 1/2 cup (120ml) Buffalo hot sauce (e.g., Frank’s RedHot Original)
  • 1/2 cup (50g) crumbled blue cheese or 1/2 cup (60g) shredded cheddar cheese

Instructions

  1. Prep the chicken: If using rotisserie chicken, shred the meat into bite-sized pieces. If cooking your own, boil two boneless, skinless chicken breasts in water for 15-18 minutes until cooked through, then shred while warm.
  2. Soften the cream cheese: Let the cream cheese sit at room temperature for 30 minutes, or microwave cubed cream cheese for 15-20 seconds until soft but not melted.
  3. Layer ingredients in the slow cooker: Place shredded chicken in the bottom. Break softened cream cheese into chunks and scatter over chicken. Pour Buffalo hot sauce evenly over the top. Sprinkle cheese of choice over everything. Do not stir.
  4. Cook on LOW for 2 hours without lifting the lid. The dip is ready when the cream cheese is fully melted and edges are bubbling.
  5. Stir well until smooth and creamy. Taste and adjust hot sauce if desired. Serve directly from the slow cooker on ‘Warm’ setting or transfer to a serving bowl.

Notes

For best results, use full-fat block cream cheese and shred your own cheese. Do not cook on HIGH as it may cause the cream cheese to break. If dip is too thick, stir in a tablespoon of milk or chicken broth. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
