Easy Baked Buffalo Chicken Sliders

These easy baked buffalo chicken football sliders are the perfect game day recipe. They come together fast, use simple ingredients, and bake up in one pan with minimal cleanup, featuring spicy-sweet buns filled with shredded chicken and melty cheese.

  • 3 cups cooked shredded chicken (rotisserie chicken works great)
  • 1/2 cup buffalo wing sauce (Frank’s RedHot recommended)
  • 1/3 cup ranch dressing (or blue cheese dressing)
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 12-count package Hawaiian sweet rolls (King’s Hawaiian recommended)
  • 6 slices provolone cheese (or mozzarella, Monterey Jack, or pepper jack)
  • 2 tablespoons unsalted butter, melted (for brushing tops)
  • 1/2 teaspoon garlic powder (for butter topping)
  • 1 tablespoon sesame seeds or everything bagel seasoning (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with nonstick cooking spray or butter.
  2. In a medium mixing bowl, combine 3 cups shredded cooked chicken, 1/2 cup buffalo wing sauce, 1/3 cup ranch dressing, 2 tablespoons melted butter, 1/2 teaspoon garlic powder, and 1/4 teaspoon onion powder. Stir until the chicken is evenly coated. Season with salt and pepper to taste.
  3. Without separating the individual rolls, slice the entire 12-pack of Hawaiian sweet rolls in half horizontally. Place the bottom half of the rolls in the prepared baking dish, cut side up.
  4. Lay 3 slices of provolone cheese over the bottom half of the rolls, tearing as needed to cover evenly.
  5. Spoon the buffalo chicken mixture evenly over the cheese layer.
  6. Top with the remaining 3 slices of provolone cheese, tearing to fit.
  7. Carefully place the top half of the rolls over the chicken and cheese, cut side down. Gently press down.
  8. In a small bowl, mix 2 tablespoons melted butter with 1/2 teaspoon garlic powder. Brush this mixture generously over the tops of the rolls. Sprinkle with sesame seeds or everything bagel seasoning if using.
  9. Cover the dish loosely with aluminum foil and bake for 15 minutes.
  10. Remove the foil and bake for another 5-10 minutes, until the tops are golden brown and the cheese is bubbly around the edges.
  11. Let the sliders rest in the dish for about 5 minutes before slicing along the seams of the rolls. Serve warm.

Notes

For extra crispy tops, switch the oven to broil for the last 1-2 minutes. Watch carefully to prevent burning. Assemble sliders up to a few hours ahead and refrigerate; add 5-10 minutes to covered baking time if starting from cold. Let sliders rest 5 minutes before cutting to allow cheese to set.
