Easy 30-Minute Set-and-Forget Crockpot Mississippi Pot Roast Recipe

A fuss-free, flavor-packed crockpot Mississippi pot roast with tender chuck roast, pepperoncini peppers, ranch seasoning, and butter. Prep in 30 minutes and let the slow cooker do the rest for melt-in-your-mouth goodness.

  • 34 lbs chuck roast (well-marbled)
  • 1 packet ranch seasoning mix (about 1 oz / 28 g)
  • 1 packet au jus gravy mix (about 0.87 oz / 25 g)
  • 1/2 cup unsalted butter (113 g), cut into pats
  • 68 pepperoncini peppers with juice
  • 1/2 cup beef broth or water (optional, 120 ml)

Instructions

  1. Trim any large chunks of excess fat from the chuck roast and pat dry with paper towels (about 5 minutes).
  2. Place the roast in the center of the crockpot; no searing needed.
  3. Evenly sprinkle the ranch seasoning mix and au jus gravy mix over the top of the roast.
  4. Nestle the whole pepperoncini peppers around and on top of the roast.
  5. Place the butter pats evenly over the surface of the roast.
  6. Optionally add 1/2 cup beef broth or water around the edges if the roast looks dry.
  7. Cover and cook on LOW for 8 hours or on HIGH for 4-5 hours until fork-tender and shreddable.
  8. Remove the roast and shred with two forks. Spoon the juices and peppers over the top before serving.

Notes

Do not lift the lid while cooking to avoid heat loss and extended cooking time. For dairy-free, substitute butter with plant-based margarine or olive oil. Use gluten-free ranch seasoning for gluten-free diet. Pepperoncini peppers provide mild heat; substitute with banana peppers if needed. Leftovers freeze well for up to 3 months.
