  • 4 ounces bittersweet or semi-sweet chocolate, chopped
  • 1/3 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/4 cup all-purpose flour
  • 1 teaspoon espresso powder
  • 1 tablespoon bourbon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 425°F (220°C). Butter two ramekins generously, then dust with cocoa powder, tapping out excess.
  2. Melt the chocolate and butter together using a double boiler or microwave in 20-second bursts, stirring until smooth and glossy. Let cool slightly for about 5 minutes.
  3. Whisk the eggs and sugar in a medium bowl until pale and slightly thickened, about 2 minutes by hand or 1 minute with an electric mixer.
  4. Stir in the espresso powder, bourbon, and vanilla extract into the melted chocolate mixture, mixing well.
  5. Fold the chocolate mixture gently but thoroughly into the eggs and sugar mixture, avoiding overmixing.
  6. Sift the flour and salt over the batter and fold carefully until just combined with no flour streaks.
  7. Divide the batter evenly between the prepared ramekins and smooth the tops with a spatula.
  8. Bake for 12-14 minutes until the edges are set but the center is still soft and jiggly.
  9. Remove from oven and let rest for 1 minute. Run a knife around the edges and invert onto dessert plates.
  10. Serve immediately with a dusting of powdered sugar or a scoop of vanilla ice cream.

Notes

Do not overbake to maintain the molten center. Bring eggs to room temperature before mixing. Grease ramekins thoroughly with butter and dust with cocoa powder to prevent sticking. For dairy-free, substitute butter with coconut oil and use dairy-free chocolate. For gluten-free, replace all-purpose flour with almond flour.
