  • 2 pounds ground beef (80/20 blend)
  • 1 cup plain breadcrumbs
  • 1/2 cup milk (whole or 2%)
  • 2 large eggs, lightly beaten
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons Worcestershire sauce
  • 1/2 cup ketchup
  • 1/2 cup packed light brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard powder

Instructions

  1. Make the foil sling: Tear off two long pieces of aluminum foil, about 18 inches each. Fold them lengthwise into strips about 3 inches wide. Lay them in a cross pattern in the bottom of your slow cooker.
  2. In a large mixing bowl, combine the breadcrumbs and milk. Let them sit for about 2-3 minutes until the breadcrumbs absorb the milk and become a paste.
  3. Add the beaten eggs, diced onion, minced garlic, Worcestershire sauce, salt, pepper, oregano, and smoked paprika. Stir until well combined.
  4. Add the ground beef. Use your hands to gently mix everything together until just combined. Do not overmix.
  5. Shape the mixture into a loaf shape, about 8 inches long and 4 inches wide, in the center of the foil sling in the slow cooker.
  6. In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and mustard powder to make the glaze.
  7. Pour about half of the glaze over the top of the meatloaf, spreading it evenly. Reserve the remaining glaze.
  8. Cover the slow cooker and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the internal temperature reaches 160°F (71°C).
  9. About 30 minutes before serving, spread the remaining glaze over the top. Cook uncovered for the last 30 minutes for a thicker glaze.
  10. Using the foil sling, carefully lift the meatloaf out of the slow cooker and transfer to a cutting board or serving platter. Let it rest for 5-10 minutes before slicing.

Notes

Don’t skip the foil sling for easy removal. Let the meatloaf rest before slicing to keep it moist. For a thicker glaze, cook uncovered for the last 30 minutes. Use a meat thermometer to ensure it reaches 160°F.
