Ingredients

Scale
  • 3 medium zucchinis, grated (about 24 ounces or 680 grams)
  • 1 cup finely grated Parmesan cheese (about 100 grams)
  • ½ cup all-purpose flour (60 grams) or almond flour for gluten-free option
  • 2 large eggs, beaten
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped
  • Salt and black pepper to taste
  • 34 tablespoons olive oil for frying
  • For the Tangy Lemon Dill Tzatziki:
  • 1 cup full-fat Greek yogurt (240 ml)
  • ½ cucumber, grated and squeezed dry (about ½ cup or 60 grams)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh chopped dill
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Grate the zucchinis using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel or fine mesh sieve and squeeze firmly to remove excess water. Expect about 1 to 1 ½ cups of dry zucchini (150-200 grams). (Prep time: 10 minutes)
  2. In a large bowl, combine grated zucchini, Parmesan cheese, flour, beaten eggs, minced garlic, and chopped dill. Season generously with salt and pepper. Stir until well combined and the mixture holds together. Add more flour if too wet. (Prep time: 5 minutes)
  3. Prepare the tzatziki by mixing Greek yogurt, grated cucumber (squeezed dry), lemon juice, minced garlic, chopped dill, salt, and pepper in a small bowl. Chill in the fridge to let flavors meld. (Prep time: 5 minutes + chilling)
  4. Heat 3-4 tablespoons olive oil in a large skillet over medium heat. Test readiness by dropping a small pinch of batter; it should sizzle immediately. (Cook time: 3 minutes)
  5. Scoop about 2 tablespoons (30 ml) of batter per fritter and gently flatten into 2-3 inch rounds in the hot oil. Cook in batches without overcrowding. Fry for 3-4 minutes per side until golden brown and crispy. Flip carefully with a spatula. Adjust heat as needed. (Cook time: 15 minutes)
  6. Transfer cooked fritters to a paper towel-lined plate to absorb excess oil. Serve warm with chilled lemon dill tzatziki for dipping.

Notes

Squeeze out all excess moisture from zucchini to avoid soggy fritters. Use medium heat to prevent burning and ensure even cooking. Do not overcrowd the pan. Let batter rest for 5 minutes before frying. For gluten-free, substitute flour with almond flour. For vegan adaptation, replace eggs with flax eggs and use dairy-free cheese and yogurt.
