Instructions

  1. Cut the ripe avocado in half, remove the pit, and scoop the flesh into a small bowl. Add 1 teaspoon fresh lemon juice and a pinch of salt. Mash gently with a fork until creamy but still a bit chunky. Set aside.
  2. Slice the everything bagel into 1/2-inch thick rounds. Heat 1 tablespoon olive oil or butter in a skillet over medium heat. Toast the bagel slices on each side until golden brown and crispy, about 2-3 minutes per side. Remove and set aside.
  3. Bring 3 cups (about 24 fl oz) of water to a gentle simmer in a medium saucepan. Add 1 tablespoon white vinegar to the water. Crack one egg into a small bowl. Swirl the water gently to create a vortex, then carefully slide the egg into the water. Poach for 3-4 minutes for a runny yolk or longer if preferred. Use a slotted spoon to remove the egg and place on a paper towel to drain. Repeat for the second egg if making two servings.
  4. Spread a generous layer of the mashed avocado on each toasted everything bagel slice. Gently place the poached egg on top.
  5. Season with salt, freshly cracked black pepper, and red pepper flakes if using. Garnish with chopped chives or fresh herbs and drizzle with olive oil or hot sauce if desired.
