  • 1 1/2 cups (170g) shredded mozzarella cheese
  • 1 cup (115g) shredded sharp cheddar cheese
  • Optional: pinch of red pepper flakes
  • Optional: grated Parmesan cheese for topping
  • Optional: add-ins like cooked bacon bits, caramelized onions, sun-dried tomatoes, jalapeños, or cayenne pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix softened butter with minced garlic, chopped parsley, chopped rosemary, salt, black pepper, and optional red pepper flakes until well combined.
  3. Place the bread on a cutting board. Using a sharp serrated knife, make cuts about 1 inch apart vertically and horizontally, stopping about 1/2 inch from the bottom crust to create a grid pattern without slicing all the way through.
  4. Using a spoon or pastry brush, gently push the garlic herb butter mixture into every cut, making sure it reaches all layers.
  5. Stuff shredded mozzarella and sharp cheddar evenly between the cuts, using about 1 1/2 cups mozzarella and 1 cup cheddar. Avoid packing too tight to allow cheese to melt and ooze.
  6. Wrap the loaf loosely in foil and place it on a rimmed baking sheet.
  7. Bake for 15 minutes, then remove the foil and bake for an additional 10 minutes to crisp the top and edges until cheese is bubbly and golden and bread crust is crispy.
  8. Let the bread cool slightly for about 5 minutes before serving to enjoy the gooey cheese pull.

Notes

Use room temperature butter for easier spreading. Do not slice all the way through the bread to keep it intact. Foil tenting traps steam to melt cheese and keep bread soft inside before crisping.
