  • 1 teaspoon garlic powder

  • 12 egg roll wrappers
  • Vegetable oil, for frying
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ¼ cup crumbled blue cheese
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix shredded chicken, buffalo wing sauce, shredded cheddar, softened cream cheese, and melted butter. Add garlic powder, salt, and pepper. Stir well until creamy and evenly coated.
  2. Lay an egg roll wrapper on a clean surface with a corner pointing toward you (diamond shape). Place about 2 tablespoons of the buffalo chicken filling near the bottom corner. Fold the bottom corner over the filling, then fold in the sides tightly. Roll upwards firmly, sealing the top edge with a dab of water to keep it closed. Repeat with remaining wrappers and filling.
  3. Pour vegetable oil into a deep pan to about 2 inches depth. Heat over medium-high heat to 350°F (175°C). Use a thermometer if available, or test by dropping a small piece of wrapper in the oil—it should sizzle and float immediately.
  4. Carefully add egg rolls to hot oil in batches, avoiding overcrowding. Fry until golden brown and crispy, about 3-4 minutes per side. Use tongs to turn them gently. Remove and drain on paper towels.
  5. While frying, combine mayonnaise, sour cream, blue cheese crumbles, lemon juice, garlic powder, salt, and pepper in a small bowl. Stir until smooth but still chunky. Chill until ready to serve.
  6. Plate the crispy buffalo chicken egg rolls with the blue cheese dipping sauce on the side. Garnish with chopped green onions or celery sticks if desired.

Notes

Do not overfill the egg rolls to prevent bursting during frying. Maintain oil temperature around 350°F (175°C) for best results. Air frying is a lighter alternative; cook at 400°F (200°C) for about 10 minutes, flipping halfway. The blue cheese dip can be made a day ahead and chilled. Leftovers can be reheated in oven or air fryer to maintain crispiness. For gluten-free, substitute egg roll wrappers with rice paper or gluten-free wrappers. For dairy-free, use coconut yogurt and dairy-free cheese alternatives.
