  • 6 bone-in, skin-on chicken thighs
  • 1/4 cup (85g) honey
  • 3 tablespoons (45ml) soy sauce (use tamari for gluten-free or coconut aminos for soy-free)
  • 1 tablespoon (15ml) sesame oil
  • 1 tablespoon (15ml) rice vinegar or apple cider vinegar
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 teaspoon toasted sesame seeds
  • 2 scallions, thinly sliced
  • Optional: pinch of red pepper flakes
  • Optional: 1 teaspoon fresh ginger, minced
  • Optional: 1 teaspoon Sriracha or chili paste for spicy kick

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top if available.
  2. In a mixing bowl, whisk together honey, soy sauce, sesame oil, rice vinegar, minced garlic, and optional red pepper flakes.
  3. Pat chicken thighs dry with paper towels and season generously with salt and pepper on both sides.
  4. Arrange chicken thighs skin-side up on the wire rack or directly on the foil-lined baking sheet, spaced apart.
  5. Bake for 20 minutes until skin starts to turn golden and slightly crispy.
  6. Remove chicken from oven and brush glaze generously over each piece. Flip thighs carefully and brush the other side, keeping skin-side up.
  7. Return to oven and bake for another 8–10 minutes until chicken is cooked through and glaze is sticky and caramelized (internal temperature 165°F/74°C).
  8. Optional: Broil for 2–3 minutes for extra crispiness and caramelization, watching carefully to avoid burning.
  9. Let chicken rest for 5 minutes. Sprinkle with toasted sesame seeds and sliced scallions before serving.

Notes

Dry the chicken skin thoroughly before seasoning to ensure crispiness. Use a wire rack for best results or flip chicken halfway if baking directly on foil. Broil briefly at the end for extra caramelization but watch carefully to avoid burning. The glaze can be warmed slightly if too thick to spread. Store leftovers in an airtight container in the fridge up to 3 days or freeze up to 2 months.
