  • 1/2 cup mayonnaise
  • 1 to 2 chipotle peppers in adobo sauce, finely chopped
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon honey
  • 1 small clove garlic, minced
  • Pinch of salt (for sauce)

Instructions

  1. Peel and slice the sweet potatoes into uniform 1/4-inch thick fries, about 6 inches long. Rinse the cut fries in cold water for 2 minutes to remove excess starch, then pat completely dry with a clean kitchen towel or paper towels.
  2. Transfer the dried fries to a large bowl. Sprinkle the cornstarch evenly over them, then toss gently to coat. Drizzle the olive oil over the fries and sprinkle with smoked paprika, garlic powder, salt, and black pepper. Toss until each fry is lightly coated.
  3. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  4. Place the fries in the air fryer basket in a single layer (cook in batches if needed). Cook for 10 minutes, shaking the basket or flipping the fries halfway through.
  5. Remove the fries and let them rest for 2 minutes. Return them to the basket for an additional 5 to 7 minutes to achieve extra crispiness.
  6. While fries cook, combine mayonnaise, chopped chipotle peppers, lime juice, honey, minced garlic, and a pinch of salt in a small bowl. Stir until smooth and adjust seasoning as needed.
  7. Serve the fries hot and crispy with the chipotle dipping sauce immediately.
