Instructions

  1. Rinse the salmon fillets under cold water and pat dry with paper towels. Cut into 1-inch cubes, aiming for uniform size so they cook evenly.
  2. In a medium bowl, toss the salmon cubes with olive oil, salt, and black pepper until lightly coated. Set aside.
  3. In a small saucepan over medium heat, combine soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil. Stir frequently and bring just to a gentle simmer.
  4. Mix the cornstarch and water until smooth, then slowly whisk into the simmering sauce. Continue stirring for 1-2 minutes until the glaze thickens slightly. Remove from heat and set aside to cool.
  5. Preheat the air fryer to 400°F and let it run empty for 3-5 minutes.
  6. Arrange the salmon cubes in a single layer inside the air fryer basket. Cook at 400°F for 8-10 minutes, shaking or flipping halfway through for even crispness.
