  • 3 tablespoons everything bagel seasoning
  • 1 cup panko breadcrumbs (about 90 grams), Japanese style preferred
  • ½ cup all-purpose flour (60 grams)
  • 2 large eggs, beaten
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Cooking spray or light olive oil spray
  • For the honey mustard dipping sauce:
  • ¼ cup mayonnaise (60 ml)
  • 2 tablespoons Dijon mustard (30 ml)
  • 2 tablespoons honey (30 ml)
  • 1 teaspoon lemon juice (5 ml)
  • Salt and pepper to taste

Instructions

  1. Pat chicken tenders dry with paper towels and trim any excess fat or tendons (about 5 minutes).
  2. Set up dredging stations: In one shallow dish, mix flour, salt, and pepper. In a second bowl, beat eggs. In a third dish, combine panko breadcrumbs and everything bagel seasoning (about 5 minutes).
  3. Coat each chicken tender by dredging in flour mixture, shaking off excess, dipping into beaten eggs, then pressing into the seasoned panko mixture. Place coated tenders on a plate (10-15 minutes).
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes and lightly spray the basket with cooking spray.
  5. Arrange tenders in a single layer in the air fryer basket without touching. Lightly spray tops with cooking spray. Cook at 400°F (200°C) for 8 minutes, flip, spray again, and cook for another 5-7 minutes until golden brown and internal temperature reaches 165°F (74°C) (total 13-15 minutes).
  6. While chicken cooks, whisk together mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper to make the honey mustard sauce.
  7. Serve the crispy chicken tenders hot with honey mustard sauce on the side.

Notes

Pat chicken dry to help coating stick. Lightly spray tenders before and after flipping for best crispiness. Avoid overcrowding air fryer basket. Use a meat thermometer to ensure internal temp of 165°F (74°C). Chill coated tenders for 10 minutes if coating feels loose. Honey mustard sauce can be made ahead and refrigerated. Leftovers keep well in fridge up to 3 days and reheat best in air fryer at 350°F for 4-5 minutes.
