  • For Buffalo sauce: ⅓ cup hot sauce (Frank’s RedHot) mixed with 2 tablespoons melted butter
  • For honey garlic glaze: ¼ cup honey, 2 cloves minced garlic, 1 tablespoon soy sauce, simmered for 2 minutes
  • For dry rub: 1 tablespoon of your favorite seasoning blend (ranch, lemon pepper, BBQ rub)
  • Dipping sauces: Ranch dressing, blue cheese dressing, or creamy buffalo chicken dip

Instructions

  1. Prep the wings (5 minutes): If you bought whole wings, cut them at the joints. Discard the tips or save them for stock. Pat each piece very dry with paper towels.
  2. Season the wings (2 minutes): In a large bowl, combine the baking powder, salt, pepper, garlic powder, and smoked paprika if using. Add the dried wings and toss well with your hands until every piece is evenly coated.
  3. Rest the wings (15 minutes): Arrange the seasoned wings in a single layer on a wire rack set over a baking sheet. Place them in the refrigerator, uncovered, for 15 minutes.
  4. Preheat the air fryer (3 minutes): Set your air fryer to 380°F (193°C). Let it preheat for at least 3 minutes.
  5. Arrange the wings: Place the wings in the air fryer basket in a single layer. Don’t overcrowd—leave space between each piece for air to circulate. Work in batches if needed.
  6. Cook the wings (12 minutes): Air fry at 380°F for 6 minutes. Flip each piece with tongs, then cook for another 6 minutes. The wings should be golden brown and the skin should look blistered and crispy.
  7. Check for doneness (1 minute): Use an instant-read thermometer to check the thickest part of a drumette. You’re looking for 175-185°F. The meat should pull away from the bone easily.
  8. Rest and sauce (2 minutes): Let the wings rest on a clean wire rack for 2 minutes. If you’re tossing them in sauce, do it now while they’re still hot. For buffalo sauce, toss in a bowl with the sauce mixture. For dry rub, sprinkle the seasoning over the hot wings and toss gently.

Notes

Don’t skip the 15-minute rest in the fridge—it’s the secret to the crunch. If wings aren’t crispy after 12 minutes, cook in 2-minute increments. For gluten-free, ensure baking powder is certified gluten-free. For lower sodium, reduce salt to ½ teaspoon.
