A luscious, creamy pumpkin spice cold brew float perfect for fall, featuring a velvety whipped pumpkin cream topping layered over smooth cold brew coffee.

  • 1 ½ cups (360 ml) cold brew coffee, chilled
  • ½ cup (120 g) pumpkin purée, canned or homemade
  • 1 cup (240 ml) heavy cream, cold (or coconut cream for dairy-free)
  • 2 tablespoons (25 g) brown sugar, packed
  • 1 teaspoon (2 g) pumpkin pie spice
  • ½ teaspoon (2.5 ml) vanilla extract
  • 1 tablespoon (15 ml) maple syrup (optional)
  • Ice cubes, as needed
  • Ground cinnamon or cinnamon stick for garnish (optional)

Instructions

  1. Chill the mixing bowl and beaters in the fridge or freezer for 10–15 minutes.
  2. In the chilled bowl, combine cold heavy cream, pumpkin purée, brown sugar, pumpkin pie spice, vanilla extract, and maple syrup if using.
  3. Whip the mixture on medium speed until soft peaks form, about 3–4 minutes. Be careful not to over-whip.
  4. Fill a serving glass about ¾ full with ice cubes.
  5. Slowly pour cold brew coffee over the ice, leaving space at the top for the cream float.
  6. Gently spoon or dollop the whipped pumpkin cream mixture over the cold brew to create a distinct layer.
  7. Sprinkle a pinch of pumpkin pie spice or cinnamon on top for garnish.
  8. Serve immediately with a straw or long spoon and enjoy.

Notes

Keep all equipment and ingredients cold for best whipping results. Do not over-whip the cream to avoid turning it into butter. Use fresh cold brew coffee for optimal flavor and texture. Prepare the pumpkin cream just before serving for best texture, or refrigerate and re-whip briefly before serving if made ahead.
