Creamy Whipped Feta Bruschetta with Balsamic Strawberries

A quick and easy appetizer featuring a smooth whipped feta spread paired with sweet, tangy balsamic strawberries on toasted crusty bread. Perfect for entertaining or a flavorful snack.

  • 8 ounces feta cheese, crumbled
  • 4 ounces cream cheese, softened
  • 1 cup fresh strawberries, hulled and sliced
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey or maple syrup (optional)
  • A few fresh basil leaves, finely chopped
  • 1 small garlic clove, minced or grated (optional)
  • 2 tablespoons olive oil, for drizzling
  • 1 loaf baguette or ciabatta bread, sliced diagonally about ½ inch thick

Instructions

  1. In a medium bowl, combine sliced strawberries, balsamic vinegar, and honey (if using). Gently toss to coat and let sit for 10-15 minutes at room temperature to macerate.
  2. Add crumbled feta and softened cream cheese to a food processor. Blend on high for 1-2 minutes until smooth and creamy, scraping down sides as needed.
  3. Add minced garlic and chopped basil to the whipped cheese mixture. Pulse a few times to combine without overblending.
  4. Preheat oven to 375°F (190°C). Arrange bread slices on a baking sheet and brush lightly with olive oil. Toast for 8-10 minutes, flipping halfway, until golden and crisp. Alternatively, toast in a skillet over medium heat for 2-3 minutes per side.
  5. Spread a generous layer of whipped feta mixture on each toasted bread slice. Top with spoonfuls of balsamic strawberries, including some of the juice.
  6. Optionally, garnish with a fresh basil leaf or a light drizzle of olive oil. Serve immediately.

Notes

If the whipped feta thickens too much after chilling, let it sit at room temperature for a few minutes before spreading. Avoid spreading on bread that is too hot to maintain the light texture. Macerate strawberries for 10-15 minutes for best flavor without mushiness. Use a sturdy crusty bread like baguette or ciabatta to prevent sogginess.
