  • ¼ teaspoon black pepper, freshly ground

Instructions

  1. Prep the Potatoes (5 minutes): Scrub the Yukon Gold potatoes clean. No need to peel them! Cut the potatoes into uniform 1-inch chunks.
  2. Boil the Potatoes (15-20 minutes): Place the potato chunks in your medium saucepan and cover them with cold water by about 1 inch. Add a generous tablespoon of salt to the water. Bring the water to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes, or until the potatoes are fork-tender.
  3. Drain and Dry (2 minutes): Drain the potatoes in a colander. Return the empty pot to the stove over low heat for about 30 seconds to dry it out. Then, return the drained potatoes to the hot, dry pot. Let them sit for about 1 minute, shaking the pot occasionally.
  4. Mash the Potatoes (3 minutes): Turn off the heat. Add the softened butter and cream cheese to the hot potatoes. Start mashing with your potato masher, using a gentle, rocking motion, until the butter and cream cheese are mostly melted and the potatoes are broken down.
  5. Add the Milk and Seasonings (2 minutes): Pour in the warmed milk, salt, and pepper. Continue mashing and folding with your spatula until everything is combined and you’ve reached your desired consistency. Taste and adjust the seasoning.
