Creamy Slow Cooker White Chicken Chili Recipe with Corn

A creamy, hearty white chicken chili made effortlessly in a slow cooker with tender chicken, white beans, fresh corn, and a luscious blend of cream cheese and sour cream. Perfect for cozy dinners and easy weeknight meals.

  • 2 large skinless, boneless chicken breasts (about 1 lb / 450 g)
  • 2 cans white beans (15 oz / 425 g each), drained and rinsed (cannellini or great northern beans)
  • 1 cup fresh or frozen corn kernels (about 150 g)
  • 1 can mild diced green chilies (4 oz / 115 g)
  • 3 cups chicken broth (720 ml), low sodium preferred
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 4 oz full-fat cream cheese, softened
  • ½ cup sour cream (120 ml)
  • 1 tablespoon olive oil

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Add finely chopped onion and cook until translucent and soft, about 5-7 minutes.
  2. Add minced garlic and cook for another 1-2 minutes until fragrant, being careful not to burn.
  3. Place chicken breasts at the bottom of the slow cooker. Pour sautéed onion and garlic over the chicken.
  4. Add drained and rinsed white beans, 1 cup corn kernels, and the entire can of diced green chilies to the slow cooker.
  5. Sprinkle cumin, oregano, salt, and pepper over the mixture. Pour in 3 cups chicken broth and stir gently to combine, avoiding mixing the chicken in just yet.
  6. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken is fully cooked and tender.
  7. Remove chicken breasts and shred with forks on a cutting board. Return shredded chicken to the slow cooker.
  8. Cut softened cream cheese into cubes and stir into the chili until melted and smooth. Mix in sour cream and adjust salt and pepper to taste.
  9. Let chili cook uncovered on low for another 10-15 minutes to thicken and blend flavors.
  10. Before serving, stir well and add optional toppings like shredded cheddar, sliced avocado, fresh cilantro, or a squeeze of lime.

Notes

Sautéing onions and garlic before adding to the slow cooker enhances flavor. Use room temperature cream cheese to avoid clumping. Adjust seasoning at the end. If chili is too thick after adding cream cheese, stir in extra broth or water. For spicier chili, add jalapeños or cayenne pepper. Chicken thighs can be used instead of breasts for juicier texture. Store leftovers in airtight container in fridge up to 4 days or freeze up to 3 months.
