A quick and easy overnight oats recipe combining creamy peanut butter and ripe banana for a wholesome, filling breakfast that thickens perfectly overnight without becoming gloopy.

Ingredients

Scale
  • 1 cup (90 g) rolled oats
  • 1 cup (240 ml) milk (dairy, almond, oat, or preferred type)
  • 2 tablespoons (30 g) creamy peanut butter
  • 1 ripe banana, mashed
  • ¼ cup (60 g) Greek yogurt (optional)
  • 1 tablespoon (15 ml) honey or maple syrup
  • 1 tablespoon (12 g) chia seeds
  • ½ teaspoon (2.5 ml) vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana in a mixing bowl until mostly smooth with a few small lumps (1-2 minutes).
  2. Stir in the peanut butter until combined into a creamy base.
  3. Add rolled oats and chia seeds; stir to distribute evenly.
  4. Pour in milk and Greek yogurt (if using); mix until well combined.
  5. Add honey or maple syrup, vanilla extract, and a pinch of salt; stir thoroughly.
  6. Transfer the mixture into a jar or airtight container and seal tightly.
  7. Refrigerate for at least 6 hours, ideally overnight, to allow oats to soak and thicken.
  8. In the morning, stir gently and add optional toppings like banana slices, peanut butter drizzle, or chopped nuts before serving.

Notes

Use natural, unsweetened peanut butter for best texture and flavor. The ripeness of the banana affects sweetness and texture—choose bananas with brown spots but still firm. Chia seeds help thicken the oats and add fiber; do not skip unless you prefer a runnier texture. If too thick in the morning, stir in a splash of milk; if too thin, add more oats and let sit for 10-15 minutes before eating. Variations include adding cocoa powder for chocolate flavor or swapping peanut butter for sunflower seed butter for a nut-free version.
