Instructions

  1. Mash the banana: Peel the ripe banana and place it in a jar or small bowl. Use a fork to mash it thoroughly until mostly smooth with a few small lumps.
  2. Add wet ingredients: To the mashed banana, add peanut butter, milk, maple syrup or honey, and vanilla extract. Stir until the peanut butter is fully incorporated and the mixture is smooth.
  3. Add dry ingredients: Pour in rolled oats, chia seeds (if using), and a pinch of salt. Stir until everything is evenly distributed. The mixture will look liquid—this is normal.
  4. Taste and adjust: Dip a clean spoon in and check sweetness and peanut butter flavor. Add more maple syrup or salt if needed.
  5. Seal and refrigerate: Put the lid on the jar or container and shake or stir once more. Refrigerate for at least 6 hours, but ideally 8-12 hours (overnight).
