  • 1 cup (240ml) milk (any kind)
  • ¼ cup (60g) plain Greek yogurt
  • 3 tablespoons (48g) creamy peanut butter
  • 2 tablespoons (30ml) pure maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • ½ teaspoon vanilla extract
  • A tiny pinch of salt
  • 2 tablespoons (30g) mini chocolate chips (semi-sweet or dark)

Instructions

  1. Combine the dry ingredients: In a medium bowl or directly in your jar, add 1 cup rolled oats, 1 tablespoon chia seeds (if using), and a tiny pinch of salt. Give it a quick stir so everything is evenly distributed.
  2. Mix the wet ingredients: In a small bowl or liquid measuring cup, whisk together 1 cup milk, ¼ cup Greek yogurt, 3 tablespoons creamy peanut butter, 2 tablespoons maple syrup, and ½ teaspoon vanilla extract. Whisk until the peanut butter is mostly incorporated—a few small lumps are totally fine.
  3. Pour and stir: Pour the wet mixture over the dry ingredients. Stir well until every oat is coated. This is important—if you don’t stir thoroughly, you’ll end up with dry pockets of oats in the morning.
  4. Fold in the chocolate chips: Add 2 tablespoons of mini chocolate chips and fold them in gently. They’ll sink to the bottom overnight, which is actually perfect because they soften slightly and create a little chocolate layer.
  5. Divide and seal: Pour the mixture evenly into two jars or containers. Leave about ½ inch of space at the top for expansion. Seal with lids and give each jar a gentle shake to settle everything.
  6. Refrigerate overnight: Place the jars in the fridge for at least 6 hours, but overnight (8-12 hours) is ideal. The oats need time to absorb the liquid and soften.
  7. Enjoy in the morning: In the morning, grab a jar from the fridge, give it a good stir, and add your favorite toppings. I like a sliced banana, a drizzle of extra peanut butter, and a sprinkle of flaky sea salt. Eat it cold straight from the jar, or microwave it for 30-45 seconds if you prefer warm oats.

Notes

For a nut-free version, swap peanut butter with sunflower seed butter or tahini. Use certified gluten-free oats if needed. If you’re out of Greek yogurt, just add an extra ¼ cup of milk—the texture will be slightly thinner but still delicious. Stir the mixture again about 30 minutes after refrigerating to distribute chia seeds evenly. Store in the fridge for up to 5 days; do not freeze.
