Tender chicken thighs with a golden brown crust in a rich, velvety sun-dried tomato basil sauce. This comforting and indulgent dish is quick and easy, perfect for cozy dinners.

  • 6 bone-in, skin-on chicken thighs (about 3 lbs / 1.4 kg)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • ½ cup chopped sun-dried tomatoes packed in oil (drain lightly)
  • 1 cup chicken broth (240 ml)
  • ¾ cup heavy cream (180 ml)
  • ½ cup grated Parmesan cheese (about 50g)
  • ¼ cup chopped fresh basil
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels and season generously with salt and black pepper. Let sit at room temperature for 10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Place chicken thighs skin-side down and cook undisturbed for 6-8 minutes until deep golden brown. Flip and cook the other side for 4-5 minutes.
  3. Transfer chicken to a plate and tent loosely with foil to keep warm.
  4. Lower heat to medium and add butter to the same pan. Once melted, add minced garlic and sauté for about 30 seconds until fragrant.
  5. Stir in chopped sun-dried tomatoes and cook for 1 minute.
  6. Pour in chicken broth and scrape up browned bits from the pan. Let simmer for 3-4 minutes to reduce slightly.
  7. Reduce heat to low and slowly add heavy cream while stirring. Add grated Parmesan and whisk until melted and sauce thickens. Add more broth or cream if sauce is too thick.
  8. Return chicken thighs to the pan, skin side up, and spoon sauce over them.
  9. Cover loosely and simmer on low heat for 15-20 minutes until chicken is cooked through (internal temperature 165°F / 74°C) and tender.
  10. Stir in chopped fresh basil and red pepper flakes if using. Adjust salt and pepper to taste.
  11. Serve immediately, spooning sauce generously over the chicken.

Notes

Pat chicken dry for crispy skin. Sear skin-side down first without moving for best crust. Avoid burning garlic to prevent bitterness. Simmer sauce gently on low heat to prevent cream separation. Rest chicken tented with foil after searing to keep juicy. For extra crispy skin, broil 2-3 minutes after simmering, watching carefully.
