  • 1/2 cup (120 ml) fresh key lime juice
  • 1 cup (240 ml) sweetened condensed milk
  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (60 g) graham cracker crumbs
  • 1/4 cup (50 g) granulated sugar
  • 1/2 cup (120 ml) heavy cream, whipped lightly
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Soften the cream cheese by letting it sit out for about 30 minutes until soft but still firm.
  2. In a medium bowl, beat the softened cream cheese with granulated sugar until smooth and creamy, about 2-3 minutes.
  3. Slowly pour in the fresh key lime juice and vanilla extract, mixing until fully combined.
  4. In a separate large bowl, whip the heavy cream until soft peaks form, about 2-3 minutes.
  5. Gently fold the whipped cream into the cream cheese and lime mixture, keeping as much air as possible.
  6. Stir in graham cracker crumbs and a pinch of salt, folding until evenly distributed without overmixing.
  7. Spoon the mixture evenly into popsicle molds, leaving a small gap at the top for expansion, then insert sticks.
  8. Freeze the molds for at least 6 hours or overnight until completely firm.
  9. To unmold, run warm water over the outside of the molds for a few seconds and serve immediately or keep frozen for up to one week.

Notes

Use room temperature cream cheese for smooth blending. Whip cream to soft peaks to avoid grainy texture. Fresh key lime juice is preferred for best flavor. For a layered effect, press extra graham cracker crumbs at the bottom of molds before filling. Dairy-free substitutions include plant-based cream cheese and coconut cream. Popsicles keep well up to one week in airtight containers.
