This copycat recipe delivers a creamy, pumpkin-flavored cold foam latte that tastes like real pumpkin and costs pennies compared to the drive-thru version. It’s quick, easy, and perfect for fall mornings.

  • 2 tablespoons (30 g) pumpkin puree
  • 1 tablespoon (8 g) powdered sugar
  • ½ teaspoon (2.5 ml) vanilla extract
  • ¼ teaspoon pumpkin pie spice
  • Pinch of salt
  • 1 cup (240 ml) strong brewed coffee or espresso, chilled
  • ½ cup (120 ml) milk of choice (oat, almond, or dairy)
  • 12 tablespoons pumpkin spice syrup (optional)
  • Ice cubes

Instructions

  1. Brew and chill your coffee base. Brew 1 cup (240 ml) of strong coffee or pull 2 shots of espresso. Let it cool to room temperature, then refrigerate for at least 15 minutes.
  2. Make the pumpkin cold foam mixture. In a small bowl or jar, combine ½ cup (120 ml) whole milk, 2 tablespoons (30 g) pumpkin puree, 1 tablespoon (8 g) powdered sugar, ½ teaspoon (2.5 ml) vanilla extract, ¼ teaspoon pumpkin pie spice, and a tiny pinch of salt. Whisk briefly to combine.
  3. Froth the cold foam. Using a handheld milk frother, froth the mixture for 30-45 seconds until it becomes thick and airy. It should roughly double in volume and hold soft peaks.
  4. Prepare the latte glass. Fill a tall 16-ounce glass with ice cubes. Pour in the chilled coffee or espresso. Add ½ cup (120 ml) of your chosen milk. If using pumpkin spice syrup, add 1-2 tablespoons now and stir gently.
  5. Layer the cold foam. Using a spoon, gently scoop the pumpkin cold foam onto the top of the iced latte. Do not stir it in.
  6. Finish and serve. Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top of the foam for garnish. Serve immediately with a straw.

Notes

For dairy-free version, use oat milk (barista edition) for both latte base and cold foam. Cold foam collapses if milk is too warm or over-frothed; use cold milk and froth for max 45 seconds. The foam mixture can be made up to 2 days in advance and stored in the fridge.
