  • ½ cup (120 ml) half-and-half cream
  • 2 tablespoons (30 g) pumpkin puree (canned, not pumpkin pie filling)
  • 1 tablespoon (15 ml) maple syrup
  • 1 teaspoon (5 ml) vanilla extract
  • 2 teaspoons pumpkin spice blend (cinnamon, nutmeg, ginger, cloves)
  • Cold brew or iced coffee to serve
  • Pinch of salt (optional)
  • Additional maple syrup or powdered sugar for sweetness adjustment (optional)

Instructions

  1. Chill your half-and-half (or milk) and mixing bowl in the fridge for at least 30 minutes.
  2. In a mixing bowl, whisk together pumpkin puree, pumpkin spice blend, and a pinch of salt until smooth and spices are evenly distributed.
  3. Add cold half-and-half, maple syrup, and vanilla extract to the bowl. Gently whisk until combined but not foamy.
  4. Froth the mixture using a milk frother or handheld electric mixer for 1 to 2 minutes until soft peaks form and texture is light and airy. If using a whisk, whisk vigorously for 5-7 minutes.
  5. Fill a tall glass about ¾ full with cold brew or iced coffee and add ice cubes as desired.
  6. Spoon the pumpkin spice cold foam over the iced coffee, letting it float on top. Garnish with a sprinkle of pumpkin spice or cinnamon if desired.
  7. Enjoy immediately by sipping through the creamy foam.
