A quick and easy frozen yogurt bark featuring creamy Greek yogurt, mixed berries, and crunchy granola, perfect for a refreshing summer snack or light dessert.

  • 2 cups (480 ml) Greek yogurt (full-fat or 2%)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract (optional)
  • 1 cup (150 g) mixed berries (fresh or frozen; blueberries, raspberries, strawberries)
  • 1/2 cup (50 g) granola
  • 1 tablespoon chia seeds or flaxseeds (optional)

Instructions

  1. Line a rimmed baking sheet (about 9×13 inches / 23×33 cm) with parchment paper, letting some overhang for easy removal.
  2. In a medium bowl, stir together Greek yogurt, honey or maple syrup, and vanilla extract until smooth and creamy. Adjust sweetness to taste.
  3. Pour the yogurt mixture onto the prepared tray and spread evenly to about 1/4-inch (0.6 cm) thickness using a spatula.
  4. Scatter mixed berries evenly over the yogurt. Sprinkle granola and chia or flaxseeds if using. Press gently to help toppings stick without submerging.
  5. Freeze the tray for at least 4 hours or until firm; overnight is ideal for best texture.
  6. Lift the bark from the tray using the parchment overhang and break into shards or squares. Serve immediately or store for later.

Notes

Use thick Greek yogurt for best texture. Add a tablespoon of milk if yogurt is too thick. Do not thaw before serving to avoid mushiness. Add granola just before freezing to keep it crunchy. Fresh berries add juiciness; frozen berries work year-round. Variations include adding peanut butter swirl, chopped nuts, shredded coconut, or tropical fruits.
