Instructions

  1. Freeze the bananas: Peel and slice 3 ripe bananas into 1/2-inch pieces. Spread them out in a single layer on a parchment-lined baking sheet and freeze for at least 2 hours, preferably overnight.
  2. Prepare the blender: Add the frozen banana slices to a high-speed blender or food processor. Pour in 1/4 cup (60 ml) milk of your choice and 1 teaspoon vanilla extract.
  3. Blend until smooth: Pulse and blend for about 2-3 minutes, scraping down the sides as needed, until creamy and smooth like soft-serve ice cream. Add a splash more milk if too thick, but avoid making it runny.
  4. Add peanut butter: Spoon in 1/3 cup peanut butter and blend again for 30-45 seconds until fully incorporated but still thick.
  5. Sweeten if needed: Taste the mixture and add 1 tablespoon maple syrup or honey if bananas aren’t sweet enough, then blend briefly.
  6. Fold in chocolate chips: Transfer the ice cream base to a mixing bowl and gently fold in 1/3 cup (60 grams) chocolate chips with a spatula to keep them intact.
  7. Freeze to set: Pour the mixture into a freezer-safe container, smooth the top, and freeze for at least 1 hour to firm up.
