  • 3 cups shredded chicken (about 450g) – rotisserie or cooked chicken breast
  • 8 ounces (225g) cream cheese, softened
  • 1/2 cup (120ml) buffalo sauce (e.g., Frank’s RedHot)
  • 1/2 cup (120ml) ranch dressing
  • 1 cup (100g) shredded cheddar cheese
  • 1/4 cup (30g) blue cheese crumbles (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  1. Shred the chicken using two forks until bite-sized, about 5 minutes.
  2. Soften the cream cheese by letting it sit at room temperature for 20-30 minutes.
  3. In a mixing bowl, combine softened cream cheese and buffalo sauce until smooth and evenly blended.
  4. Place shredded chicken in the crockpot and pour the cream cheese and buffalo sauce mixture over it. Stir well to coat all the chicken.
  5. Add ranch dressing, garlic powder, onion powder, salt, and pepper. Stir to combine evenly.
  6. Cook on low heat for 2 hours, stirring halfway through to keep the mixture blended.
  7. After 2 hours, add shredded cheddar cheese and optional blue cheese crumbles. Stir until melted and incorporated, about 5 minutes.
  8. Taste and adjust seasoning or heat level as desired, adding extra buffalo sauce if needed.
  9. Set crockpot to ‘keep warm’ and serve warm with chips, celery sticks, or preferred dippers.

Notes

Softening the cream cheese before mixing prevents lumps. Cook on low to avoid curdling and maintain creamy texture. Stir halfway through cooking to prevent sticking and ensure even flavor melding. Use quality buffalo sauce for best flavor. Adjust heat with extra ranch or cream cheese if needed. Can be baked at 350°F for 25-30 minutes if no crockpot is available.
