  • 8 ounces fettuccine or your favorite long pasta (linguine or tagliatelle)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, finely minced
  • 2 teaspoons fresh thyme leaves
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: pinch of red pepper flakes
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Slice the steak thinly against the grain for tenderness. Mince garlic finely and strip thyme leaves from stems. Grate the Parmesan cheese and set aside.
  2. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions (8 to 10 minutes). Reserve ½ cup of pasta water before draining.
  3. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Season steak slices with salt and pepper. Add steak to the hot pan in a single layer, searing for 2-3 minutes per side until browned but still juicy inside. Remove steak and set aside on a warm plate.
  4. Reduce heat to medium. Add butter to the same skillet and melt gently. Stir in minced garlic and thyme leaves; cook for about 1 minute until fragrant but not browned.
  5. Pour in heavy cream and bring to a simmer. Stir in grated Parmesan cheese and a pinch of red pepper flakes if using. Let the sauce thicken slightly, about 2 minutes. If it gets too thick, add reserved pasta water a tablespoon at a time to loosen.
  6. Return steak slices to the skillet along with drained pasta. Toss everything gently to coat with the creamy cowboy butter sauce. Taste and adjust seasoning with salt and pepper.
  7. Garnish with chopped fresh parsley if desired. Serve immediately.

Notes

Use pasta water to loosen sauce if it becomes too thick. Rest steak briefly before slicing to keep it tender. Avoid burning garlic to prevent bitterness. For dairy-free, substitute butter with olive oil and heavy cream with coconut cream or almond milk. Gluten-free pasta can be used as a substitute.
