  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped chives
  • 1/4 cup finely diced red onion (optional)
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon apple cider vinegar

Instructions

  1. Place the halved potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over high heat. Cook for 12-15 minutes until potatoes are tender when pierced with a fork but not falling apart. Drain well and spread out on a baking sheet to cool slightly.
  2. While potatoes cook, fry bacon in a skillet over medium heat until crisp, about 6-8 minutes, turning occasionally. Transfer to paper towels to drain and cool, then chop into bite-sized pieces.
  3. In a large bowl, combine mayonnaise, ranch seasoning, garlic powder, apple cider vinegar, salt, and pepper. Stir until smooth and well blended.
  4. Add the slightly cooled potatoes to the dressing and gently fold to coat without breaking the potatoes. Fold in chopped bacon, diced red onion, parsley, and chives. Taste and adjust seasoning if needed.
