  • 2 tablespoons brown sugar (packed)
  • 1 teaspoon vanilla extract (pure)
  • 1 orange (sliced into rounds for garnish)
  • Apple slices (for garnish, tossed in lemon juice)
  • 2 tablespoons cinnamon sugar (for rim; mix 1 tbsp cinnamon + 1 tbsp sugar)
  • 1 tablespoon honey (for rim)

Instructions

  1. Pour the 4 cups of apple cider into a medium saucepan. Heat over medium-high until it reaches a gentle simmer (about 3-4 minutes).
  2. Add the cinnamon sticks, whole cloves, and star anise pods. Stir and let simmer for 5-7 minutes to infuse the spices.
  3. Stir in the 2 tablespoons of packed brown sugar until completely dissolved (about 30 seconds). Taste and adjust sweetness if desired.
  4. Remove the saucepan from heat. Let it sit for 30 seconds, then stir in the 1 cup of spiced rum and 1 teaspoon of vanilla extract.
  5. Prepare the glasses: dip the rim of each mug into honey, then into the cinnamon sugar mixture to coat.
  6. Strain the mixture through a fine-mesh strainer into the prepared mugs (or ladle directly if you don’t mind whole spices). Garnish with an orange slice, apple slices, and a fresh cinnamon stick.
  7. Serve immediately while hot.

Notes

For a non-alcoholic version, skip the rum and add an extra cup of apple cider, 1 1/2 teaspoons vanilla, and a splash of apple cider vinegar. The cider base (without rum) can be made up to 3 days ahead and stored in the fridge. For parties, use a slow cooker on low for 2-3 hours, then add rum before serving. Toast whole spices in a dry pan for 30 seconds before adding to deepen flavor. Do not let the cider boil after adding rum to avoid burning off alcohol.
