  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional, for sprinkling on top)

Instructions

  1. Prepare the filling by combining 1/4 cup softened unsalted butter, 1/3 cup packed brown sugar, 1 tablespoon ground cinnamon, and 1 teaspoon vanilla extract in a small mixing bowl. Mix until smooth and creamy, about 3 minutes.
  2. Lay out 6 slices of sourdough bread on a clean surface. If slices are thick, gently press them flat with your hands or a rolling pin, keeping some texture.
  3. Spread about 1 tablespoon of the brown sugar cinnamon butter filling evenly on 3 of the bread slices, leaving a 1/2-inch border around the edges.
  4. Place the remaining 3 slices of bread on top of the filled slices, pressing down gently to seal. Use a fork to crimp the edges all around each tart to prevent leaks.
  5. Beat one large egg and lightly brush the tops of each tart with the egg wash. Sprinkle coarse sugar on top if desired.
  6. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or a silicone mat. Place the assembled pop tarts on the sheet with space between each.
  7. Bake for 15-18 minutes until edges are golden brown and crisp. Watch after 12 minutes to avoid burning.
