  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (5 grams) kosher salt
  • ½ teaspoon (2 grams) black pepper, freshly ground
  • ¼ teaspoon (0.5 grams) ground cinnamon (optional)
  • ¼ cup (60 ml) tahini
  • 2 tablespoons (30 ml) pure maple syrup
  • 1 tablespoon (15 ml) lemon juice, freshly squeezed
  • 23 tablespoons (3045 ml) water
  • 1 small garlic clove, minced
  • Optional garnish: fresh parsley or thyme, chopped; pomegranate seeds

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Wash the delicata squash thoroughly under running water, scrubbing the skin gently with a vegetable brush. Cut off both ends of each squash—about ¼ inch from each tip.
  3. Slice the squash crosswise into ½-inch thick rings. Use your fingers or a small spoon to gently remove the seeds from the center.
  4. Place the squash rings on the prepared baking sheet in a single layer. Drizzle with 2 tablespoons of olive oil, then sprinkle with 1 teaspoon kosher salt, ½ teaspoon black pepper, and ¼ teaspoon ground cinnamon (if using). Toss gently to coat evenly. Arrange rings in a single layer with space between them.
  5. Roast for 20-25 minutes, flipping the rings halfway through, until edges are golden brown and caramelized and the flesh is tender when pierced with a fork.
  6. While the squash roasts, make the maple tahini drizzle: In a small bowl, combine ¼ cup tahini, 2 tablespoons maple syrup, 1 tablespoon lemon juice, and 1 small minced garlic clove. Whisk until smooth. Add 2-3 tablespoons of water, one tablespoon at a time, whisking continuously until you reach a smooth, pourable consistency. Taste and adjust seasoning if needed.
  7. Transfer the roasted squash rings to a serving platter. Drizzle the maple tahini sauce generously over the top. Garnish with fresh chopped parsley or thyme and pomegranate seeds if desired. Serve warm or at room temperature.

Notes

The sauce will thicken as it sits. If making ahead, store sauce in the fridge and add a splash of warm water before drizzling. For best results, don’t crowd the squash rings on the baking sheet to ensure caramelization. Let the roasted squash rest for 2-3 minutes before transferring to prevent breaking.
