  • 1/2 cup (100g) brown sugar, packed

  • 1/2 teaspoon salt
  • 1 cup (245g) pumpkin puree, canned or homemade
  • 1/3 cup (80ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 cup (60ml) buttermilk (or milk + lemon juice/vinegar substitute)
  • 8 oz (225g) cream cheese, softened
  • 1/3 cup (40g) powdered sugar
  • 1/2 teaspoon vanilla extract
  • 3/4 cup (90g) chopped pecans, toasted
  • 1/3 cup (70g) light brown sugar, packed
  • 1/4 cup (30g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 4 tablespoons (55g) unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease each cup.
  2. Toast chopped pecans in a dry skillet over medium heat for 3-4 minutes until fragrant. In a small bowl, combine toasted pecans, brown sugar, flour, cinnamon, and salt. Add cold cubed butter and use a pastry cutter or fingers to mix until crumbly and pea-sized. Chill in the fridge.
  3. In a medium bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Set aside.
  4. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. In another bowl, whisk pumpkin puree, vegetable oil, eggs, vanilla extract, and buttermilk until smooth.
  6. Pour wet ingredients into dry ingredients and gently fold with a spatula just until combined; do not overmix.
  7. Spoon about 2 tablespoons of batter into each muffin cup. Add about 1 teaspoon of cream cheese filling in the center, then cover with more batter until each cup is about 3/4 full.
  8. Generously sprinkle the spiced pecan streusel over each muffin, pressing lightly to adhere.
  9. Bake for 20-25 minutes until a toothpick inserted near the cream cheese filling comes out mostly clean with a few moist crumbs.
  10. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chill the cream cheese filling before assembling to prevent leaking during baking. Toast pecans just before making the streusel to enhance flavor. Avoid overmixing the batter to keep muffins tender. Streusel can be chilled before baking to maintain crispness. Muffins freeze well; wrap individually and thaw or warm before serving.
