Cozy Pumpkin Cinnamon Roll Casserole Recipe with Maple Cream Cheese Drizzle

A comforting and easy-to-make casserole combining soft cinnamon rolls with spiced pumpkin custard, topped with a silky maple cream cheese drizzle. Perfect for fall mornings and brunch gatherings.

  • 8 frozen cinnamon rolls (about 12 oz/340g), thawed slightly
  • 1 cup (240 ml) pumpkin puree, canned (not pumpkin pie filling)
  • 2 large eggs, room temperature
  • ½ cup (100g) packed brown sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 oz (115g) cream cheese, softened
  • ¼ cup (60 ml) pure maple syrup
  • ¼ cup (60 ml) milk (any kind)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×9-inch baking dish lightly with butter or non-stick spray.
  2. Unroll the thawed cinnamon rolls and cut each into quarters to create bite-sized pieces.
  3. In a medium bowl, whisk together pumpkin puree, eggs, brown sugar, ground cinnamon, ground nutmeg, vanilla extract, and salt until smooth and aromatic.
  4. Spread half of the cinnamon roll pieces evenly in the baking dish. Pour half of the pumpkin mixture over them, pressing lightly so the rolls absorb the custard.
  5. Repeat layering with the remaining cinnamon roll pieces and pumpkin mixture.
  6. Bake the casserole for 30–35 minutes until puffed and a toothpick inserted in the center comes out mostly clean.
  7. While baking, combine softened cream cheese, maple syrup, and milk in a small bowl. Whisk until smooth and pourable, adjusting thickness with more milk or cream cheese if needed.
  8. Let the casserole cool for about 10 minutes after baking, then drizzle the maple cream cheese mixture over the top before serving.

Notes

Do not over-soak the cinnamon rolls; press pumpkin mixture gently. Use room-temperature eggs for smooth custard. Pure pumpkin puree is preferred over pumpkin pie filling. Watch bake time carefully to avoid under- or over-baking. Whip the drizzle well for a silky texture. For a crunchier top, broil 1-2 minutes at the end, watching carefully.
