Cozy One-Pot Lasagna Soup with Italian Sausage

A quick and easy 30-minute meal that delivers all the comfort of classic lasagna in a bowl, with rich tomato broth, Italian sausage, and broken lasagna noodles, topped with melted mozzarella and Parmesan.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups low-sodium chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce
  • 8 lasagna noodles, broken into 2-inch pieces
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped (for garnish)
  • Salt and black pepper, to taste

Instructions

  1. Heat the olive oil in a Dutch oven over medium-high heat. Add the Italian sausage (removed from casings if in links) and cook, breaking it up, until browned and cooked through, about 5-7 minutes. Leave about a tablespoon of fat in the pot. Transfer sausage to a plate with a slotted spoon and set aside.
  2. Reduce heat to medium. Add diced onion and cook for 3-4 minutes until soft and translucent, scraping up browned bits. Add minced garlic, dried oregano, and red pepper flakes (if using) and cook for 30 seconds until fragrant.
  3. Pour in chicken broth, crushed tomatoes, and tomato sauce. Stir, scraping up any remaining browned bits. Bring to a boil, then reduce to a simmer. Let bubble gently for 5 minutes.
  4. Add broken lasagna noodles, stirring to submerge. Cook according to package directions for al dente, about 10-12 minutes, checking at 8 minutes. Stir occasionally to prevent sticking.
  5. Return cooked sausage to the pot. Stir in heavy cream, 1/2 cup mozzarella, and 1/4 cup Parmesan until melted and smooth. Taste and adjust seasoning with salt and pepper.
  6. Ladle soup into bowls. Top with remaining mozzarella and Parmesan. Sprinkle with fresh basil or parsley. Serve immediately.

Notes

For leftovers, cook pasta separately and add to individual servings to prevent mushiness. Use low-sodium broth to control salt. Add cheese gradually to avoid clumping. The soup thickens overnight; add a splash of broth when reheating.
