Cozy One Pot Kielbasa and Cabbage Soup – Easy Recipe

This hearty and comforting soup is made in one pot with smoky kielbasa, tender cabbage, and a savory broth. It’s quick, easy, and perfect for chilly nights.

  • 1 large yellow onion, diced (about 1 ½ cups)
  • 2 large carrots, peeled and diced (about 1 cup)
  • 2 celery stalks, diced (about ½ cup)
  • 3 cloves garlic, minced
  • 1 pound (450g) smoked kielbasa sausage, sliced into ½-inch rounds
  • ½ head of green cabbage, cored and chopped into bite-sized pieces (about 56 cups)
  • 1 can (14.5 oz / 411g) diced tomatoes, undrained
  • 4 cups (960ml) low-sodium chicken broth
  • 1 cup (240ml) water
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 bay leaf
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Brown the Kielbasa: Place a large pot over medium-high heat. Add olive oil. Add sliced kielbasa in a single layer and cook undisturbed for 2-3 minutes until deeply browned. Flip and cook another 2 minutes. Transfer to a plate and set aside.
  2. Sauté the Aromatics: Reduce heat to medium. Add onion, carrots, and celery. Cook, stirring occasionally, for about 5 minutes until onion is translucent. Add garlic and cook 30 seconds until fragrant.
  3. Add the Cabbage: Add chopped cabbage and cook for 3-4 minutes, stirring, until it starts to wilt.
  4. Build the Broth: Add diced tomatoes (with juices), chicken broth, water, thyme, smoked paprika, black pepper, salt, bay leaf, and red pepper flakes (if using). Stir to combine.
  5. Simmer and Finish: Bring to a gentle boil, then reduce heat to low. Cover and simmer for 20 minutes. Uncover, stir in browned kielbasa, and simmer 5 more minutes.
  6. Final Taste and Serve: Remove bay leaf. Adjust seasoning to taste. Ladle into bowls and serve hot.

Notes

For best flavor, brown the kielbasa well to create a fond. Start with less salt and adjust at the end. The soup tastes even better the next day. To freeze, cool completely and store in airtight containers for up to 3 months.
