Ingredients

Scale
  • 1 cup ripe bananas, mashed (about 2 large bananas)
  • 3/4 cup canned pumpkin puree, unsweetened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs, room temperature
  • 1/3 cup vegetable oil or melted butter (use dairy-free oil for allergy-friendly)
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves or ginger (optional)
  • For the Cream Cheese Frosting:
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 to 1 1/2 cups powdered sugar, sifted
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and optional cloves or ginger.
  3. In a separate bowl, mash bananas until smooth. Add pumpkin puree, brown sugar, granulated sugar, eggs, oil or melted butter, and vanilla extract. Whisk until well combined and glossy.
  4. Slowly add dry ingredients to wet ingredients, folding gently with a spatula until just combined. Batter should be thick and slightly lumpy.
  5. Pour batter into prepared loaf pan and smooth the top with a spatula.
  6. Bake for 55 to 65 minutes, checking doneness with a toothpick inserted in the center; it should come out clean or with a few moist crumbs. Tent with foil if top browns too fast.
  7. Let the loaf cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  8. For the frosting, beat cream cheese and butter until smooth and fluffy. Gradually add powdered sugar, beating until creamy. Mix in vanilla extract and salt. Adjust sweetness and thickness as desired.
  9. Once the bread is fully cooled, spread the cream cheese frosting evenly over the top with a spatula.

Notes

Use room temperature eggs and butter/oil for best texture. Measure flour carefully by spooning and leveling. Check bread starting at 50 minutes to avoid overbaking. Fold batter gently to avoid toughness. Fresh spices improve flavor. Frosting can be made while bread bakes if cream cheese and butter are softened. Adding nuts like walnuts or pecans (1/2 cup) to batter adds texture.
