  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 3 medium carrots, peeled and cut into chunks
  • 2 medium parsnips, peeled and cut into chunks
  • 2 celery stalks, sliced
  • 1 cup baby potatoes, halved
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Pat the beef chunks dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown beef in batches for 3-4 minutes per side. Transfer browned beef to the crockpot.
  3. In the same skillet, sauté diced onion until softened and translucent, about 5 minutes. Add minced garlic and cook for 1 minute.
  4. Stir in tomato paste and cook for 2 minutes, stirring often.
  5. Pour red wine into the skillet, scraping up browned bits. Simmer for 3-4 minutes until slightly reduced.
  6. Pour wine mixture over beef in crockpot. Add beef broth, carrots, parsnips, celery, baby potatoes, thyme sprigs, and bay leaves. Season with salt and pepper.
  7. Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is fork-tender and vegetables are soft.
  8. Remove thyme sprigs and bay leaves. Stir and adjust seasoning. For thicker broth, mix 1 tablespoon cornstarch with 2 tablespoons cold water, stir into stew, and cook for 15 more minutes.
  9. Serve hot, garnished with fresh parsley or a dollop of sour cream if desired.

Browning the beef before slow cooking adds rich flavor. Use dry red wine like Merlot or Cabernet Sauvignon. Avoid lifting the crockpot lid frequently to maintain cooking temperature.
