A simple and comforting slow cooker recipe that recreates the classic Cracker Barrel chicken and dumplings with juicy chicken thighs and fluffy dumplings cooked right in the broth.

  • 4 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 tsp dried thyme
  • Salt and freshly ground black pepper to taste
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup whole milk
  • 2 tbsp unsalted butter, melted

Instructions

  1. Rinse and pat dry the chicken thighs. Dice the onion, carrots, and celery. Mince the garlic.
  2. Place chicken thighs at the bottom of the slow cooker. Add diced onion, carrots, celery, and garlic on top. Pour in the chicken broth. Sprinkle thyme, salt, and pepper evenly over everything.
  3. Cover and cook on low for 4 hours or on high for 2-3 hours, until chicken is fully cooked and vegetables are tender.
  4. Carefully remove chicken thighs and shred them with two forks. Return the shredded chicken to the slow cooker, stirring gently.
  5. In a mixing bowl, whisk together flour, baking powder, and salt. Slowly add milk and melted butter, stirring until just combined.
  6. Drop spoonfuls of the batter onto the surface of the hot broth mixture. Cover and cook on high for 45 minutes to 1 hour, until dumplings are puffed and cooked through.
  7. Taste and adjust salt and pepper if needed. If the broth feels too thick, stir in a little extra broth or water to reach preferred consistency.

Notes

Use chicken thighs for juicier meat; breasts may dry out. Add dumplings only after chicken is cooked to avoid gummy texture. Keep lid closed while dumplings cook to ensure proper rising. Adjust seasoning after dumplings cook as flour can absorb saltiness. Dumplings can be made gluten-free by substituting flour with a gluten-free blend. For dairy-free, use dairy-free milk.
