  • 2 tablespoons (16g) cornstarch
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Pinch of salt
  • 1 cup (90g) rolled oats
  • 1/2 cup (60g) all-purpose flour
  • 1/2 cup (60g) pecans, roughly chopped
  • 1/2 cup (100g) light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick or 113g) unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Make the crumble topping: In a medium bowl, whisk together rolled oats, flour, chopped pecans, brown sugar, cinnamon, and salt. Add cold, cubed butter. Using a pastry cutter or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse, wet sand with some pea-sized butter pieces remaining. Refrigerate while preparing the apples.
  3. Par-cook the apples: In a large skillet over medium heat, add sliced apples, granulated sugar, brown sugar, lemon juice, cornstarch, cinnamon, nutmeg, and a pinch of salt. Cook, stirring frequently, for 5-7 minutes until apples start to soften and release juices. Do not cook through.
  4. Assemble the crisp: Pour the par-cooked apple mixture into the prepared baking dish and spread evenly. Sprinkle the cold oat pecan crumble evenly over the top. Do not press down.
  5. Place the dish on a baking sheet. Bake for 35-40 minutes, until filling is bubbly and topping is deep golden brown. If topping browns too quickly, loosely tent with foil for the last 10 minutes.
  6. Remove from oven and let cool on a wire rack for at least 15-20 minutes before serving. Serve warm.
