  • 2 teaspoons vanilla extract
  • For the cinnamon-sugar coating:
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup (1/2 stick) melted butter

Instructions

  1. Reduce the apple cider: Pour 1 cup of apple cider into a small saucepan and bring to a boil over medium-high heat. Reduce heat to medium and simmer, stirring occasionally, until reduced to about 1/4 cup (12-15 minutes). Set aside to cool.
  2. Brown the butter: Cut 1 cup of butter into pieces and add to a light-colored saucepan over medium heat. Stir constantly until the butter melts, foams, and turns a deep amber color with brown specks (5-7 minutes). Remove from heat immediately and pour into a heatproof bowl. Let cool for 10 minutes.
  3. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin thoroughly with butter or non-stick spray.
  4. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
  5. Mix wet ingredients: In a medium bowl, whisk together cooled brown butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time, whisking well after each. Stir in buttermilk, vanilla extract, and cooled reduced cider until smooth and glossy.

  7. Fill muffin cups: Divide batter evenly among 12 muffin cups, filling each about 3/4 full.
