  • 2 tablespoons bourbon
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 1 tablespoon fresh lemon juice

  • A pinch of salt
  • 1 tablespoon all-purpose flour (for peach filling)
  • 1 cup rolled oats
  • ¾ cup all-purpose flour (for oat topping)
  • ½ cup (1 stick) unsalted butter, cold and cut into small cubes
  • 1 teaspoon vanilla extract
  • Optional: pinch of nutmeg or a handful of chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your baking dish lightly with butter or nonstick spray.
  2. In a medium bowl, combine the sliced peaches, bourbon, brown sugar, granulated sugar, lemon juice, cinnamon, salt, and 1 tablespoon of flour. Toss gently to coat all the peaches evenly. Let sit for about 10 minutes to macerate.
  3. In another bowl, mix together the rolled oats, ¾ cup flour, and a pinch of salt. Add the cold, cubed butter and vanilla extract. Use a pastry cutter or fork to cut the butter into the oat mixture until it resembles coarse crumbs with some pea-sized pieces. Stir in chopped pecans if using.
  4. Pour the peach mixture evenly into the prepared baking dish. Sprinkle the oat topping evenly over the peaches.
  5. Bake for 35-40 minutes until peach juices are bubbly and topping is golden brown. If topping browns too fast, cover loosely with foil for the last 10 minutes.
  6. Let the crisp rest for 10-15 minutes before serving to allow the filling to thicken.

Notes

Use cold butter for a crumbly topping. Let peaches macerate with bourbon and sugar before baking to avoid dryness. Adjust sugar based on peach ripeness. For gluten-free, substitute all-purpose flour with almond flour or gluten-free blend and use gluten-free oats. If topping browns too quickly, cover with foil.
