  • ½ cup baking soda (for the bath)
  • Coarse sea salt or pretzel salt, for sprinkling

  • ½ cup (120ml) beer (lager or Oktoberfest-style)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F) and sugar. Sprinkle yeast on top, stir gently, and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until a shaggy dough forms. Gradually add remaining 1 ½ cups flour until dough pulls away from bowl sides. It should be slightly sticky.
  3. Knead the dough: Turn dough onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. Dough should spring back when pressed.
  4. First rise: Place dough in a lightly greased bowl, cover with a towel or plastic wrap, and let rise in a warm spot for about 45 minutes until doubled in size.
  5. Prepare the baking soda bath: In a large pot, combine 8 cups water and ½ cup baking soda. Do not boil yet; let the baking soda dissolve.
  6. Shape the bites: Punch down the dough and divide into 4 equal pieces. Roll each into a 12-inch long, 1-inch thick rope. Cut into 1-inch pieces (about 16-20 per rope).
  7. Boil the bites: Bring the baking soda water to a gentle boil. Drop bites in batches, boiling for 20-30 seconds per side. Remove with a slotted spoon and place on a parchment-lined baking sheet.
  8. Score and salt: Cut a small ‘X’ on top of each bite. Sprinkle generously with coarse sea salt.
  9. Bake: Preheat oven to 425°F (220°C). Bake for 12-15 minutes until deep golden brown.
