  • ½ cup old-fashioned rolled oats
  • ½ cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small cubes
  • ¼ teaspoon almond extract

Instructions

  1. Make the crust: In a large bowl, whisk together flour, sugar, and salt. Add cold butter cubes and cut in with a pastry cutter or fingers until mixture resembles coarse sand with a few pea-sized butter lumps. Add egg yolk and 2 tablespoons ice water; stir with a fork until dough just comes together. Add remaining water if needed. Press dough evenly into a 9-inch pie dish, prick bottom with a fork, and refrigerate for at least 15 minutes. Preheat oven to 375°F (190°C).
  2. Prepare the filling: In a large bowl, combine sliced apples, cranberries, granulated sugar, brown sugar, flour, lemon juice, vanilla, cinnamon, nutmeg, and cloves. Toss until fruit is evenly coated. Let sit for 5-10 minutes, then stir again.
  3. Make the crumble topping: In a medium bowl, whisk together flour, oats, brown sugar, cinnamon, and salt. Add cold butter cubes and almond extract. Rub butter into dry ingredients with fingers or a pastry cutter until mixture forms clumps of various sizes. Set aside or refrigerate if kitchen is warm.
  4. Assemble and bake: Pour fruit filling into chilled crust, spreading evenly. Sprinkle crumble topping over filling without pressing down. Place pie on a baking sheet and bake at 375°F (190°C) for 45-55 minutes, until filling bubbles and topping is deep golden brown. If topping browns too quickly, tent with foil after 30 minutes. Cool on a wire rack for at least 2 hours before slicing.

Notes

For best results, use cold butter and do not overmix the crumble. Let the pie cool completely for at least 2 hours to allow the filling to set. If using frozen cranberries, do not thaw them first. For a gluten-free version, use a 1:1 gluten-free flour blend and certified gluten-free oats. For a dairy-free version, use vegan butter.
