  • 1 cup milk of choice (e.g., oat milk)
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons chia seeds
  • 2 tablespoons pure maple syrup

  • 1 teaspoon cinnamon
  • 1 pinch salt
  • 1 medium apple (Honeycrisp, Fuji, or Gala)
  • 1 teaspoon lemon juice (optional)
  • 2 tablespoons chopped walnuts or pecans (per serving, optional)
  • Extra cinnamon for dusting (optional)
  • Drizzle of maple syrup or honey (optional)

Instructions

  1. Wash the apple. Grate one half on the large holes of a box grater (skin on). Dice the other half into small, pea-sized cubes. Toss both with lemon juice to prevent browning.
  2. In a liquid measuring cup or small bowl, whisk together milk, Greek yogurt, maple syrup, and vanilla extract until smooth.
  3. Divide rolled oats evenly between two pint-sized mason jars. Add 1 tablespoon chia seeds to each jar. Sprinkle cinnamon and salt evenly over the top.
  4. Divide the grated and diced apple between the two jars, placing it on top of the dry ingredients. Gently press down with a spoon.
  5. Pour the milk-yogurt mixture evenly over the apples and oats in each jar. Do not stir yet.
  6. Using a long spoon, stir each jar thoroughly from the bottom up until no dry pockets remain and the mixture is uniform. Stir for about 30 seconds per jar.
  7. Seal the jars tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  8. In the morning, remove a jar from the fridge about 10 minutes before eating. Stir well. If too thick, add a splash of milk; if too thin, add more chia seeds and let sit for 30 minutes.
  9. Top with chopped walnuts or pecans, extra cinnamon, and a drizzle of maple syrup if desired. Serve straight from the jar or transfer to a bowl.

Notes

For best texture, use rolled oats (not quick or steel-cut). Grating half the apple ensures apple flavor in every bite. Oats keep in the fridge for up to 5 days; add nuts just before serving to keep them crunchy. For a warm version, microwave for 45-60 seconds.
