  • 1 cup (200 grams) granulated sugar
  • 1/2 cup (100 grams) light brown sugar, packed

  • 1/2 cup (120 ml) buttermilk
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 cup (60 ml) reduced apple cider (for glaze)
  • 1 1/2 cups (180 grams) powdered sugar, sifted
  • 2 tablespoons (28 grams) unsalted butter, melted
  • 1/2 teaspoon vanilla extract (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Reduce the apple cider: Pour 2 cups of apple cider into a saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer gently for 20-25 minutes, stirring occasionally, until reduced to about 1/2 cup. It should be thick and syrupy. Set aside to cool.
  2. Preheat oven to 350°F (175°C). Grease a 10-cup Bundt pan thoroughly with butter or nonstick spray, then dust with flour, tapping out excess.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
  4. In another large bowl, beat softened butter, granulated sugar, and brown sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes. Scrape down sides.
  5. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  6. With mixer on low, add one-third of the dry ingredients to the butter mixture, mixing until just combined. Add half of the buttermilk, mixing gently. Repeat with another third of dry ingredients, remaining buttermilk, and final third of dry ingredients. Mix until just combined.
  7. Fold in 1/4 cup of the reduced apple cider with a rubber spatula until evenly distributed.
  8. Pour batter into prepared Bundt pan and spread evenly. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Let cake cool in pan on a wire rack for 15 minutes. Invert onto rack and cool completely, about 1 hour.
  10. Make the glaze: In a small bowl, whisk together remaining 1/4 cup reduced apple cider, sifted powdered sugar, melted butter, vanilla extract, and a pinch of salt until smooth. Adjust consistency if needed.
  11. Once cake is completely cool, place on serving plate and pour glaze over top, letting it drip down sides. Let glaze set for about 10 minutes before slicing.

Don’t skip reducing the cider—it concentrates the apple flavor. Room temperature ingredients ensure a smooth batter. Grease the pan thoroughly to prevent sticking. Check for doneness at 35 minutes. Let glaze set before slicing for best results.
