  • 2 large bags (1618 ounces total) tortilla chips, sturdy restaurant-style
  • 1 pound ground beef (80/20 blend)
  • 1 packet (3 tablespoons) taco seasoning
  • 2 cups queso dip
  • 1 can (16 ounces) refried beans
  • 1 cup pickled jalapeños, drained
  • 1 ½ cups shredded Mexican blend cheese (or Monterey Jack and sharp cheddar)
  • 1 cup sour cream
  • 1 ½ cups pico de gallo
  • 1 ½ cups guacamole
  • 1 can (4 ounces) black olives, sliced, drained
  • 2 fresh jalapeños, thinly sliced
  • ½ cup fresh cilantro, roughly chopped
  • ½ cup diced white onion (optional)
  • Hot sauce (optional, for serving)
  • Extra lime wedges (optional)

Instructions

  1. Cook the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned (about 6-8 minutes). Drain off excess fat if more than 1 tablespoon. Reduce heat to low, add taco seasoning and ⅓ cup water, and stir. Simmer for 3-4 minutes until liquid thickens and coats the meat. Set aside and keep warm.
  2. Warm the beans and queso: Empty refried beans into a small saucepan over medium-low heat. Stir occasionally until hot, about 4-5 minutes. If too thick, stir in water 1 tablespoon at a time until spreadable. Transfer to a small serving bowl. Warm queso dip in a separate saucepan or microwave (30-second intervals, stirring between each). Pour into a small bowl or mini slow cooker to keep warm.
  3. Prep the fresh toppings: Slice fresh jalapeños into thin rounds. Chop cilantro. If making homemade pico or guacamole, do that now. Open and drain black olives. Set all cold toppings in their bowls.
  4. Warm the chips: Preheat oven to 350°F. Spread tortilla chips in a single layer on a large baking sheet. Bake for 5-6 minutes until warm and toasty.
  5. Assemble the board: Place a large board or platter in the center of the table. Arrange warm chips in a generous pile in the middle, leaving space around edges for bowls. Set bowls of queso, refried beans, sour cream, guacamole, and pico de gallo around the chips. Fill gaps with seasoned beef, shredded cheese, pickled jalapeños, fresh jalapeños, black olives, and cilantro. Add optional diced onion or lime wedges.
  6. Serve immediately: Set out small plates, napkins, and serving spoons. Let everyone build their own plate. Stir queso occasionally if it thickens.

Notes

Prep all components the night before for easy assembly on game day. Use sturdy restaurant-style chips to prevent breakage. Keep queso warm in a mini slow cooker or reheat in 20-second microwave bursts. The seasoned beef tastes even better the next day.
